Of food I can't eat but still want to make.
I'm new here, so I'm sure there's still a lot to learn about me, but I've been on a slow process of figuring out if I'm allergic to gluten or not. So, for now I've been told to avoid it. I absolutely adore baking though, as well as cooking and so I wanted to make a quiche for others to enjoy, (others being my boyfriend.)
Spinach, Feta and Tomato Quiche

It's an easy enough recipe, and even though I didn't have the heart to go through with making a crust from scratch I heard it turned out delicious.


What you'll need:
- eggs
- milk
- crumbled feta cheese
- onion
- spinach
- cherry tomatoes
- nutmeg
- dough sheets (or ingredients to make a dough if you're going that route.)
You can use whatever fillings you like to be honest, I just went with tomatoes onions and feta. I used the ratio of 1/2 cup of milk for every egg used, so if you can to make more filling go for it!
Crust: I just used some pillsbury dough sheets.
Filling:
- 1 10 oz package of frozen spinach thawed, with all the liquid squeezed out
- 1/2 cup of shopped red onion
- 1/2 cup of crumbled feta cheese
- aprox. 10 cherry tomatoes, halved
Quiche Batter
- 2 eggs
- 1 cup of low fat milk or 1 cup of lactaid milk (for those of us who are lactose intolerant, and yes cheese doesn't bother us for whatever reason. We're not complaining.)
- Dash of nutmeg
Onward to baking!
- Preheated the oven to 350F, and did a little dance around the kitchen.
- Coated the pie pan lightly with coconut oil (you can use cooking spray.) Laid the dough sheet onto the pie pan, I actually didn't trim the edges but rounded them to make it more even.
- Mix together spinach and onion, and go ahead and add some feta cheese on the bottom of the pie pan sitting atop the crust, then go ahead and add the mixture of spinach and onion on top of that. I added some more feta throughout, because feta, but you don't have to.
- Whisk all your quiche batter ingredients in a bowl and season with salt and pepper if desired. Pour that batter atop the filling and arrange those halved tomatoes however you feel like it.
- Set on a baking sheet and bake for 45-50 minutes or until center is set and crust is a nice golden brown.

Ta-da! We have quiche off. It's a super simple recipe with not much effort thrown at it, but still looks impressive when handed off to eat. Also it's just delicious.
